The region's Mediterranean climate and coastal breezes provide the optimal temperatures needed to grow these olives, and they are typically harvested in September, when the olives are young, crisp and bright green. Packaged without preservatives in a mild brine, these Castelvetrano olives have a mild, buttery flavor and firm, crisp flesh.
