Mezze Penne Rigate are part of the Penne family, but differ in that they are slightly shorter. In Italian, the term penne refers to a quill pen, which was historically used for writing and was cut diagonally to produce a very fine tip. The shape obtained from a pasta tube can be smooth or ribbed, of different lengths and have the typical diagonal cut of a feather. Penne is one of the few types of pasta for which there is an exact date of its creation. Indeed, in 1865, San Martino d'Albaro (Genoa) pasta maker Giovanni Battista Capurro sought and received a patent for a diagonal cutting machine. The patent was very important because thanks to it, fresh pasta could be cut like a feather without crushing it, and in different lengths from 3 to 5 centimeters (mezze "halves" penne or penne). The document, kept in the Central Archives of the State of Rome, states: “Until now, the diagonal cut could only be made by hand with scissors, which not only took a lot of time and effort, but also led to an uneven cut that flattened the pasta.” Small in size, Mezze Penne Rigate is ideal for stirring into creamy sauces, both red from tomatoes and white from cheese, or into classic vegetable soups that can be eaten with a spoon.
