Linguine is the most famous type of long pasta from Liguria: it resembles small, flat, narrow tagliatella-type pasta and was created to be eaten with traditional pesto. It's the flattened and slightly domed shape of this pasta that makes it ideal for holding sauce and bringing out all the different flavors. It goes well with butter and sage, with sauces based on fresh tomatoes, with vegetables and aromatic herbs, or with quick, spicy sauces made with olive oil, garlic, red pepper, anchovies and capers. It is also ideal for shellfish and seafood sauces and for “white” sauces made from cream, mascarpone, soft or processed cheeses with the addition of spices such as saffron, horseradish, curry and ginger.
